It seems like I wait and wait all year for the summer fruits to arrive. Then once they do I can't get rid of them. They stalk me day and night tempting me to make more out of their lives by baking up delicious dishes. This week I was tortured by rhubarb. I glance out my window to see the leaves staring back at me. I know if I don't use it up it will soon be gone and I will have to wait another year for their tart goodness. I know I can freeze them, which makes me feel a little better. Since you can only cook so many pies and cakes before your pants tell you enough is enough, here are a few alternatives for a rhubarb surplus.
- Chunky Rhubarb Applesauce
- Rhubarb Ice Tea
- Cold Rhubarb Soup with Mint
- Rhubarb Slush - spiked, of course
Up next week, I am venturing out for more home grown strawberries, so I am looking forward to being tortured by them for the next few weeks.
