Pasta Salad - Quick Meal for Summer

It is late on Wednesday night and I still don't know what I am going to blog about. Finally, I have decided to share my last minute recipe for pot luck events which will fill in for a last minute baking blog. The recipe is for Pasta Salad. I used to work with someone who was always impressed when I made this. I didn't have the heart to tell them you pretty much just cut, cover and toss. Pasta salad can make a great summer lunch or dinner and is liked by most. My recipe is pretty basic, but you could add on vegetables, meats or cheeses that you would prefer. Get creative and mix it up!

Basic Pasta Salad

1 green pepper and 1 onion, cut into small pieces
1/2 pound provolone cheese, cut into cubes
1/2 pound peperoni, cut into cubes
2 cups pasta (I use spiral, elbow or bow ties)
1/2 bottle Italian dressing

Cook pasta as directed. Drain. Mix with pepper, onion, cheese and meat. Cover with dressing and toss so everything gets covered. Let sit in refrigerator over night.
