Sometimes exactly what we are looking for can be right in front of our face and we don't see it. For this week's recipe I found exactly what I needed on the back of the ingredient I wanted to use. I have a bag of coconut that I have been wanting to use up. It is taking up space in my pantry and it is not like extra chocolate chips that I could just pop in my mouth as I am walking by. And I don't think I could incorporate it in my regular dinner meals. Spaghetti & Coconut just doesn't sound right unless I lived in the Caribbean. So as I had it in my hand pondering the mental recipe book in my head and before heading to my internet recipe book I glanced down and saw it....Dream Bars! Something new, something easy, something I had the ingredients for already. They are baking right now and if they turn out nice I am taking some to share at a Training class I am doing tomorrow. A little treat to make our 8 hour day of lecture a little sweeter.

Dream Bars (taken from Chef's Select Coconut Package)
1 1/2 cups Flour
2 Cups Brown Sugar
1/2 cup butter
3 eggs
1 tsp. baking powder
1 tsp. vanilla
1/4 tsp. salt
1 1/2 cups coconut
Combine flour, 1/2 cup brown sugar and butter until it makes a crumble mixture. Press into bottom of ungreased 13 x 9 pan. Bake at 350 degrees for 15 minutes. Beat 1 1/2 cups brown sugar with eggs just until blended. Mix in remaining ingredients. Spread over baked crust. Bake for 20 to 25 minutes. Cool and then cut into bars.

Dream Bars – Feeling a little spontaneous

I just ate a dream bar.....from the outside one would think it was going to be a dry crumbly bar, but inside the filling melted in your mouth and made it a "dreamy" experience....hence the name.
